Well, we couldn’t have a festival in the West Country without cider.  But this is no ordinary cider...

Made a few villages away, The Donhead Apple’s cider making philosophy is simple.  They press the best cider apple varieties when they are perfectly ripe, then let the juice ferment slowly over the following winter months.  The tannins in the cider apples take time to mellow and develop the rich, complex flavours required.  So, they allow the ciders several more months to mature before they are released.
